Today, I would like to talk about "Society aimed at by reusing malt waste". Surprisingly, it is not well known to the general public, but a large amount of malt waste is discarded in each beer production. DD4D currently makes 500L of beer in one batch. About 100 kg of malt dregs, including water, are produced there. When the new factory starts operation, it will be about 500 kg per time. Currently, with the cooperation of a nearby bird farmer, we are somehow reusing them as feed for breeding instead of throwing them out as garbage.
That's why we focused on "superfoods" , which are very popular in the United States. Superfoods are defined as “foods with excellent nutritional balance and higher nutritional value than general foods”. By drying and pulverizing malt dregs, which would normally be discarded, it can be used as powder. This malt flour is said to have twice as much protein and 12 times more dietary fiber than regular wheat flour.
A new trend in America is to reuse malt waste and upcycle it into granola, bread, cakes, and more. Following that, DD4D tried making bread as an experiment.
As you can see from the photo, the campagne is quite complete. This bread was made by DD4D member Sergei using malt flour. Crispy on the outside and moist on the inside. Although it has a slight barley scent, it is simple and has no waste. It's a pretty delicious campagne. I'm sorry for self-praise, but my impression is that it was really delicious rather than flattering. smile
This time, I tried making bread, but malt dregs, a super food, has infinite possibilities, such as making noodles using malt flour, or making something completely unimaginable. By reusing things without generating wasteful waste, we can lead to an eco-friendly recycling society. I would like to take the initiative in this kind of initiative because it is an era where environmental destruction is viewed as a problem and the word SDGs has permeated society.
