4th Anniversary Project DD4D Everyone's Challenge | Inquisitive DD4D One Early Bird Brewer SERGE

Thanks to you, DD4D BREWING will celebrate its 4th anniversary on May 30, 2023. Therefore, we have released a special page "DD4D Everyone's Challenge" with the theme of our vision "Creating a world where everyone can pursue their own path" !

We hope that through craft beer, we can create an opportunity for as many people as possible to take the first step by letting them know about the challenges and off-duty moments of the DD4D members.

How did you get into DD4D?

Originally, I was interested in craft beer. Probably my first encounter with craft beer was in 2002 when I was working at a restaurant in London watching a brewer from Germany making beer under the floor of the store. I really got into it around 2013, so maybe 10 years ago. After that, I read books, gather information, look up recipes, and even after moving to Japan, I bought and tried various craft beers. During that time, I also learned about DD4D, and since Senbunecho opened, I've been helping out with everything, not just brewing. I was an English teacher at the time, so it was part-time. Gradually, the scale of the brewery grew, and when the factory was built in Mitsu, I approached Keita and asked him to take over the brewing in Senbunecho full-time. It's not much different from when I was working part-time, but if I had to say it, I would say that I've been able to find a good place to work, and I'm living a fulfilling life every day!

Tell us your challenge!

The simple answer is "I want to be better in everything." I want to create a better environment for making delicious beer, making bread, spending time with myself, and spending time with my family. Also, I want to continue to be involved in DD4D. Earlier this year, the members visited 2nd Story in Tokushima and Nomcraft in Wakayama and made collaboration beers with each of them. I want to meet various people like that this year, collaborate with them, and make a lot of interesting beers. I hope it will be a year of more fun!

When you're not at DD4D, what do you do when you're off?

I wash, clean, cook... I do housework. In my house, I am in charge of the kitchen, so no one is allowed in the kitchen! (Laughs) Of course, my wife cooks a lot, so I sometimes stand in the kitchen with her. The dishes served at the table are French, Bulgarian, Russian and Hungarian... I want my family to enjoy not only the dishes that are familiar in Japan, but also the dishes of the cultures that I have encountered so far. I'm here. Last weekend's dinner was cabbage rolls. Simmered in homemade tomato sauce and dipped in sour cream, it's delicious! Also, I love making bread. Especially sourdough made with homemade yeast is a staple in our house. I never get tired of watching yeast puff up flour and bake beautiful bread. The same can be said for brewing beer, but it's really interesting how the wild yeast changes depending on the environment at the time, and how the resulting bread changes every time.

After graduating from university in Bulgaria, he moved to England and worked as a chef at a creative restaurant in London. After moving to Matsuyama, I started working as an English teacher and helping out at DD4D, and two years ago in 2021, I joined DD4D as a full-time brewer. One of DD4D's, or rather, an active group that you rarely see in Matsuyama. Every Monday, we basically prepare in Senbunecho. Arrive at the brewery before anyone else and get to work before anyone else while punk rock is playing. After noon, you might be able to catch a break and be the first to drink a cold beer before anyone else.
